Apple Cinnamon Waffles

CINNAMON APPLES

Ingredients

  • 1 large apple, skinned & finely diced (I cut matchsticks and then cut into tiny pieces from that)

  • 1 T water

  • 1 T brown sugar

  • 1 tsp cinnamon

  • A pinch of cloves

  • A pinch of salt

  1. Combine all ingredients into a small saucepan and heat over medium-low until the juices from the apples start bubbling a little. 

  2. Continue to stir until apples are soft with a bite (al dente!)

*Notes:

You can also make these in the microwave. I just add them to a microwave safe bowl and heat on high in 30 sec intervals, stirring after each heat. They will start to soften after approx 1:30 to 2:00 total. 

WAFFLES

Ingredients

  • 1 cup flour

  • 1 T granulated sugar

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 eggs

  • 3/4 cup milk

  • 1/3 cup butter, melted

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/2 cup cinnamon apples

  1. Preheat your waffle iron.

  2. Mix all the dry ingredients together in a large bowl. 

  3. Mix all the wet ingredients together in a medium bowl.

  4. Add the wet ingredients to the dry ingredients and mix until only a few lumps remain.

  5. Gently stir in the cinnamon apples.

  6. Spray waffle iron with nonstick spray just before the first batch goes on.

  7. Scoop by the ladleful onto the waffle iron and cook 1 minute on each side, or if your iron is different from mine, probably about 2 minutes total. 

*Notes: 

This recipe makes approx 3.25 waffles πŸ˜† so if you have more mouths to feed, you can easily double the recipe. I would double everything except the eggs (2-3 eggs is plenty even if recipe is doubled) and possibly vanilla unless you love the vanilla flavor. 

Allowing the melted butter to cool and allowing the milk and eggs to come to room temp will result in a smoother batter when mixing. I typically do not plan that far in advance and so my butter is hot and the milk and eggs are cold and it will cause the butter to solidify some looking lumpy. It’s no big deal - your waffles will still taste delicious. Sometimes I will warm the milk in the microwave for approx 30 seconds and put the eggs in a glass of warm water for a minute and that brings them both to an approximation of room temp fairly quickly!
